<p class="caption">Potatos are high in Vitamin C and Potassium. When cooked properly (ie. not as deep-fried french fries) potatos can be a healthy appetizer to any meal!</p>
<h4>Directions</h4>
<ol>
<li>Bake potatoes in a preheated oven at 425°F for 40 to 45 minutes or until tender.  Let cool.</li>
<li>Cut each potato in half lengthwise. Using a spoon, scoop out the inside of  the halves. The skin shell should be around 1/4-inch.</li>
<li>Place the 8 halves on a baking pan lined with aluminum foil. Sprinkle the onions,  cheese, garlic, salt, pepper, bacon bits, and tomatoes evenly amongst the potato  halves.</li>
<li>Bake the skins at at 450°F for 8-10 minutes or until crisp. Serve each  potato (2 skins) with one tablespoon of fat-free sour cream.</li>
