Ingredients
4 medium - baking potatoes
2 tablespoons - sliced green onions
1/2 cup - fat-free mozzarella cheese
1 clove- minced garlic
to taste - salt & pepper
4 tablespoons - bacon bits
2 medium - tomato, diced
4 tablespoons - fat-free sour cream

Potatos are high in Vitamin C and Potassium. When cooked properly (ie. not as deep-fried french fries) potatos can be a healthy appetizer to any meal!
Directions
- Bake potatoes in a preheated oven at 425°F for 40 to 45 minutes or until tender. Let cool.
- Cut each potato in half lengthwise. Using a spoon, scoop out the inside of the halves. The skin shell should be around 1/4-inch.
- Place the 8 halves on a baking pan lined with aluminum foil. Sprinkle the onions, cheese, garlic, salt, pepper, bacon bits, and tomatoes evenly amongst the potato halves.
- Bake the skins at at 450°F for 8-10 minutes or until crisp. Serve each potato (2 skins) with one tablespoon of fat-free sour cream.
