   Corn Bread

Ingredients:

1 cup - unbleached flour
1 cup - cornmeal
1/4 cup - white sugar
1 teaspoon - baking soda
3/4 teaspoon - salt
1 cup - plain nonfat yogurt
2 whole - eggs (beaten)

This corn bread recipe is a sweet treat and only 85 calories per serving.

  1. Prehead oven to 400°F. Butter or spray an 8x8 inch pan.

  2. Mix flour, cornmeal, sugar, baking soda, salt, and yogurt in a bowl. Mix until well blended.

  3. Pour batter into pan.

  4. Bake for 20 to 25 minutes or until bread looks done. Cut into 2" x 2" squares.

Yields: 16 pieces
